The first guide-catalog to the best Italian wines paired with Mozzarella di Bufala Campana DOP has been created by the Consorzio di Tutela and AIS Italia. The goal: to debunk some common myths and highlight unexpected pairings.
The title of the publication, presented on May 18 at the Regie Cavallerizze of the Royal Palace of Caserta, home of the Consorzio di Tutela Mozzarella di Bufala Campana DOP, is "Bufala&Wine in Love". The event was attended by the president of the Consorzio, Domenico Raimondo, the national president of AIS, Sandro Camilli, the president of AIS Campania, Tommaso Luongo, and others. For the wine selection, a long journey across Italy was undertaken by the Consorzio, involving the entire AIS national network.
This journey resulted in identifying the best pairings in each region of Italy. From Piedmont to Sardinia, 110 wines were selected as the best matches for Mozzarella di Bufala. This is not a ranking but a useful tool for both enthusiasts and industry professionals.
The president of the Consorzio di Tutela, Domenico Raimondo, explains: "Whenever we are asked which wine to pair with Mozzarella di Bufala Campana DOP, the answer is never simple. The DOP Bufala is a truly challenging product for sommeliers and gourmands. We have found that there is no single ideal wine for Mozzarella di Bufala Campana; there are several, original, surprising wines that are tied to the regions, just like our product. We sought out this richness and, above all, filled a gap: we finally have a study conducted methodically, a tool we can share with everyone. Thanks to this catalog, the age-old question of which wine to pair with mozzarella is turned on its head. From now on, we will ask: in which region are you? And based on the territory, we will have an answer for everyone".
